Greek Flatbread



Attention! Preparation time over 1 hour!

Ingredients (for 2 persons)

  • 270 g wheat flour
  • 10 g yeast
  • ½ tsp. salt
  • ca. 150 to 160 mL water for the dough (luke warm)

Prepare the dough

Put 270 g flour into a big bowl and add 10 g yeast in small pieces and some salt (like half a teaspoon). Mix it then add 150-160 mL water and knead the dough for 5 minutes.
Form a ball and put it back into the bowl, cover it with a wet cloth and let it sit for 30 minutes.

Forming the bread

The dough should have blown up then. Take it out and tear it into four pieces (if you want the bread to be big enough to open it and put the the main dish inside, make only two pieces). Knead each piece again for a short time and flatten them out with your hands. Put flour on your workspace or a board and put the dough on it. Put some more flour on them and cover them with a dry cloth.
Let them sit for another 30 minutes.

Baking them

Flatten the dough of the flat breads again a bit after them sitting for half an hour.
Take take a pan (no oil or anything) and bake them with low to medium heat (to the most) until they get brown, turn them frequently - this could easily take 20 to 30 minutes per "load".
This goes well with Greek Farmer Salad and a chilled Rosé
