ChezTeddy Tip: Simple way to peel tomatoes
Peel the tomatoes (see above ;-).
Peel the potatoes, cut in thin slices, add ca. 1 tsp salt to the still hot water, bring to boil and let the potatoes simmer for 3 to 4 minutes. In the meantime you can easily remove the peel of the tomatoes. Then pour the water, set pot with the potato slices aside for a short time to cool off. Cut the bell-pepper in stripes and the courgette and tomatoes in thin slices. Cut the fillets in two pieces for each person (each around 80 to 90 grams).
Pour a bit of the Olive oil (1-2 table spoons) into the tajine or casserole and then add the ingredients in layers. |
Attention! The dough should be done several hours earlier!

Preparation (dough)Give 270 g flour and 1 tsp. salt into a bowl and crumble the yeast over it. Add 130 to 140 mL water and 3 Tbsp. olive oil in several steps while kneading the dough. Keep kneading the dough for 10 to 15 minutes (a kitchen machine would be great, but one can do it by hand). Cover the dough with a wet cloth and set it for at least one hour (better two or three) aside. |

Preparation (the Pizzaiola)
Dice the cloves of garlic and and sauté in olive oil. Add the
tomatoes in pieces. Add 2 tsp. Pizza herb mix, ½ to 1 tsp. salt and some
pepper, mix well.
Let it simmer for 5 to 10 minutes, stir from time to time. The
sauce should reduce a bit, but shouldn't get too dry. |

Ingredients (for 2 toasts - as a snack this is enough, if it's a full meal, you should double the ingredients).

PreparationToast the bread, chop the onion, pluck the parsley leaves, grease the casserole dish. Clean the chanterelle, put them on the side.Quick fry the steaks in oil until medium brown, put on the side. Fry the onion in oil on medium heat until it starts to get translucent, add the chanterelle, fry until all extra water has evaporated. This will take some time, in the meantime, if necessary, grate the cheese (large flakes) and preheat the oven to 200 ℃. Now sprinkle flour over the mushrooms, sauté a short time, deglaze with 50 mL chicken broth, add Creme Fraîche (80-100 g) and parsley. Season with salt and pepper, let it slightly cook until mushroom topping is not liquid anymore (otherwise the toasted bread will get too wet). Put the bread in the casserole dish, place steaks on top and spread the mushrooms on them. Sprinkle cheese over that and bake in oven for 5 to 10 minutes. |

PreparationOne could toast the slices of bread a bit, if one likes them really cross, or if one grills them on a solid baking tray, not the grill kind.Butter the slices of bread, then spread the ham and the salami (that's important, so that the pineapple slices don't leak juice into the bread). Then put one slice of pineapple on each toast and cover it well with cheese. Put a good deal of paprika/cayenne on the cheese and grill the toasts in the preheated oven at aroud 190℃ for several minutes, until the cheese gets brown. |
